Visiting Chef Parveen Khan presents “The Savant of Spices “ at Saffron

The signature Indian restaurant, Saffron at the JW Marriott Mumbai Juhu had visiting chef Parveen Khan from the land of the Nizam’s and Begum’s “Hyderabad” honoring the culinary delights of her city through a nine-day festival from 6th – 14th December 2019. 

We highly recommend the flavour-bomb of dishes such as Subz Palak Marag, Tomato Kut, Allo Korma, Khatti Daal, Kaddu Ka Dalcha, Bhoona Lehsooni Palak, Gosht Marag, Mutton Luqmi, Khatta Murgh, Nalli Khallia, Fish Mahi Khaliya, amongst the others. All prepared with such culinary finesse. Desserts like the Kulfi Falooda, Geelay Firdouse and Qubani Ka Meetha definitely left us with dessert coma.

 Chef Parveen Khan also known as Parveen Jehan Begum belongs to an old traditional family of Hyderabad. Her mother Begum Mumtaz Khan not only taught generations of Hyderabadi women, but also consulted with hotels across the country. Growing up enveloped in an atmosphere of mouth watering delicacies, chef Parveen learnt to distinguish and dissect flavors and aromas at an early age, and went on to author a cookbook ‘Hyderabadi Khasa’. She is known to simplify old recipes but retains the authenticity by using exact weights, measures and newer methods.
